Aloo Ragda Recipe

Eat Breakfast like a King , lunch like a Prince and dinner like a Pauper !

That was pretty much my story last weekend .  Heavy breakfast , where I just hogged , as if there wont be any meal next. And then a light lunch n dinner , as there wasn’t any scope for anything else.

All this, Just because I made one of my favorite Aloo Ragda , and parathas!

Aloo Ragda or potato in tomato curry , is one of the basic everyday recipes in North India. ‘Ragda’ refers to the process of mashing up the boiled potatoes a little , to get a thick gravy .

Aloo Ragda is also a part of the wide variety of street foods that you get in north India. The most popular being the Kachodi Ragda!  You can have this Ragda with almost anything…. Samosa , tikki , plain parathas or butter naan !

You can even get a plate of hot Ragda , topped with lot of Sev and Papdi, to enjoy on its own , without pairing it with anything too …… that’s how awesome it is!

So the Ragda is the real “Show Stopper “ here. You just have to make a spicy yummy Aloo Ragda, and it will go with everything. The kids love potatoes too , so just reduce the chilli a little for them and you are all set!

Instructions
  1. Boil potatoes , remove skin and keep aside.
  2. Grind together tomatoes, green chilli and ginger in a mixer to get a puree and keep aside.
  3. Heat oil in a kadhai . Add methi dana and ajwain. After it crackles add asafoetida . Add coriander powder and crushed red chilli. Saute for 30 seconds.
  4. Now add the tomato puree and sautxe9 till the masala leaves the sides of the kadhai.
  5. Add turmeric powder, red chilli powder, degi mirch , jeera powder and salt.
  6. Saute for a minute . now add coarsely mashed boiled potatoes and water. Bring to a boil. Simmer for a few mintes.
  7. Serve Aloo Ragda hot with puri or parathas !
Recipe Notes

TIPS

  • If you are making it for kids, adjust the amount of chilli accordingly.
  • The consistency of this curry is thick, you can increase the amount of water if you need a thinner consistency.
