Aloo Ragda or potato in tomato curry , is one of the basic everyday recipes in North India. ‘Ragda’ refers to the process of mashing up the boiled potatoes a little , to get a thick gravy .
Aloo Ragda is also a part of the wide variety of street foods that you get in north India. The most popular being the Kachodi Ragda! You can have this Ragda with almost anything…. Samosa , tikki , plain parathas or butter naan !
You can even get a plate of hot Ragda , topped with lot of Sev and Papdi, to enjoy on its own , without pairing it with anything too …… that’s how awesome it is!
So the Ragda is the real “Show Stopper “ here. You just have to make a spicy yummy Aloo Ragda, and it will go with everything. The kids love potatoes too , so just reduce the chilli a little for them and you are all set!
