Banana Strawberry Muffins

The other day , a friend of mine was enquiring about my microwave oven . She needed the model number , capacity and other details as part of her market survey before buying one.  I never remember all these details about any of the gadgets I own, I am more interested in using them to get what I want. So I started looking for the user’s manual to get all the details , and found a small recipe book that was nicely tucked inside it. I had never taken a look at it before, so just out of curiosity started to shuffle through the pages.

There were a few recipes to be made in different modes of the microwave. One of them just caught my eye , it was Banana blueberry muffins! I love banana breads , and somehow the combination of banana and blueberry sounded delish….! The recipe too, looked really simple . And to top it off I had a few over-ripe bananas at home. The only problem – no blueberry preserve . But had some strawberry preserve instead.

I decided to give it a try right away , and the result was awesome. The soft banana muffins , fresh from the oven looked glorious with their golden brown colour. And the taste was just devine!

  1. Line muffin tins with paper cups
  2. Sift both flours , baking powder and baking soda together and keep aside.
  3. Beat the egg and keep aside.
  4. Microwave butter and milk for 1 min in a big bowl . Add vanilla essence, sugar and banana puree. Beat till creamy.
  5. Add flour and beaten egg . Fold gently with a spoon to get a lumpy batter . Do not overmix.
  6. Spoon batter into paper cups, filling half of the cup. Spoon 1 tsp strawberry preserve/jam in the center. Cover with some more batter so that the cup is 3/4th filled.
  7. Bake at 180oC for 20-25 mins in a preheated oven.

TIPS

  • If you don’t have any preserves or jam, you can make plain banana muffins.
  • If you dont have a muffin tray, you can use any other baking tin to get a banana cake !
