Carrot and Tomato Salad – Koshimbir

Fresh grated carrot and chopped tomato salad with Maharashtrian flavours. A simple tempering, a dash of lemon and a sprinkle of sesame seeds takes the salad to an altogether different level.

Salads are nothing new for us Marathi folks. Just that we have a different name for it – koshimbir!

It has been an indispensable part of the cuisine since ages. There can’t be a Maharashtrian food spread without the Koshimbir. There can be many differnt recipes for this , depending upon the veggies used. So again , lots of scope for experimentation.

Today I made this simple carrot and tomato koshimbir to go along with palak dal and roti. It’s a perfect condiment , giving a tangy fresh punch to any meal.

Ingredients
  • 2 carrots , medium-sized, washed , peeled and grated
  • 2 tomatoes , medium sized , chopped
  • xbd tbsp peanut powder ( dry roast s and grind in a mixer)
  • xbd tbsp sesame seeds
  • xbc tsp turmeric powder
  • xbd tsp chili powder red
  • to taste Salt
  • 1 lemon
  • Coriander leaves chopped for garnish
  • For tempering
  • 1 tsp of oil
  • xbd tsp mustard seeds
  • Pinch asafetida of hing /

Instructions
  1. Take grated carrots and chopped tomato in a bowl.
  2. Add peanut powder, sesame seeds, turmeric powder , red chilli powder and salt.
  3. For the tempering u2013 heat oil in a small kadhai. Add mustard seeds. After they crackle , add hing. Pour the tempering over the carrot and tomato bowl
  4. Mix everything together.
  5. Squeeze few drops of lemon juice over it .Garnish with chopped coriander . Serve as a condiment with any meal.
Recipe Notes

Tips

Prepare peanut powder by dry roasting peanuts and grinding them in a mixer . This can be made in advance and stored in air tight container at room temperature.
