Chawal ki Kheer – Indian Rice Pudding

Chawal ki kheer is an Indian Dessert preparation made with Rice cooked in milk .This is a mildly sweet dish , flavored with green cardamom . It is a very common preparation made in all Indian households , with slight variations ,of course. An easy to prepare one-pot dessert , that is a must try for everyone.

We Indians love our festivals , and we do know how to celebrate each and every one differently , but in style. Once again , its that time of the year. The festivities are just about to begin. A lot of sweets and snacks and traditional meals are going to be served. Exciting right?

Lets welcome this festive season with some sweets first. Todays post is about chawal ki kheer. The simplest of desserts , prepared in almost every Indian kitchen. Rice slowly cooked in milk , simmering away on a low flame. The rich creamy texture and the favor from cardamom , makes it delicious.

When I was a kid , I used to wait for the month of Shraddh ( a period during the year , we offer prayers to our ancestors ). Only for this chawal ki kheer. We being the only Brahmin family in our area back then , whoever used to do a puja , would send a plate full of prasaad ( food offered to god) to our house. And this chawal ki kheer , used to be the main part of the prasaad. So throughout Shraddh we would get to enjoy this homemade chawal ki kheer !

Even today it is made on special occasions or festivals. Sharing the recipe for the same today.

Instructions
  1. Wash the rice with water , soak for 30 minutes . Strain through a strainer and let the rice dry.
  2. Heat the milk in a heavy bottom vessel. When it starts to boil , reduce the flame and add rice , slowly with constant stirring.
  3. Let the rice cook in the milk on low flame for around 30 minutes , stirring every 2 minutes.
  4. When the rice is completely cooked , and the milk has reduced a bit, add sugar cardamom powder and saffron strands. Give it a nice mix.
  5. Let it cook for another 5-10 minutes on low flame.
  6. Remove from heat. Add the dry fruits, serve hot .
  7. You can also chill the kheer and serve. It tastes yum both ways!
Recipe Notes

TIPS

  • Keep stirring the rice and milk mixture while cooking , taking care that it doesn’t get burnt from the bottom.
  • Add sugar only after the rice is completely cooked .
