Eggless Vanilla Cake

This is one of the classic eggless recipes ever. I am sure you will find thousands of recipes for this one on the net. Sharing this recipe , as this one marked the beginning of my baking story! Last week I happened to recreate this magic , and the story went like this ……

Everyday I have to pack a small snack box for kids to carry . More often than not I find myself looking for quick fixes, and end up sending them a few biscuits or cake packs that are easily available in the super markets. And even sooner than I think , that guilt feeling sets in . The feeling that  I have packed a really unhealthy snack for them. When I know very well that I could have made a fresh home-made cake  for them that’s much healthy and filling than the packaged ones.

So I decided to make this eggless cake once again .  The kids obviously love it, but it’s also a great tea time snack , relished by hubby dearest ! You guys can try this one too –  dunk the cake into hot tea , and enjoy !

Instructions
  1. Sieve all-purpose flour and keep aside.
  2. Prepare the loaf pan by lining it with butter paper.
  3. Take sugar and curd in a mixing bowl and blend well. Add baking powder and baking soda and mix well.
  4. Now add vanilla essence and oil and mix well.
  5. Now slowly add maida in 3 parts, blending nicely each time , till u get a creamy and thick batter.
  6. Preheat oven at 180 degree. Pour the batter into the loaf pan. Bake it at 180 degrees for 30 u2013 35 mins or till a tooth prick inserted in the middle of the cake comes out clean.
  7. Let the cake cool for 10 mins on the rack. Then invert it and let it cool completely.
  8. Slice it into pieces and enjoy !
Recipe Notes

Tips

  • If you do not have butter paper , prepare the loaf tin / cake pan by greezing it with little butter and dusting with some flour
  • Let the cake cool completely before cutting into peices.
