Whenever I go for veggie shopping, I am amazed at the variety of greens that we get in India. And we surely know how to utilise the greens for innumerable preparations. We can use it in dals , mix veggies , chutneys and even salads!
One such awesome salad is made with methi / fresh fenugreek leaves. It is one of the authentic maharashtrian sides , aka koshimbir. I tasted this salad for the first time at my in-laws place. And as my readers already know, I was a really picky eater then. And greens were the most dreadful veggies of all. Looking at the salad the first thing that came into my mind was, why is the salad green? I mean they could have made any other salad, right ?
Before eating it myself, I started to observe everyone’s expression after they ate it. They all seemed to be loving it! The voice inside my head said , they are just making it up, it can’t be that good.
But being a newly wed , and not wanting to disrespect anyone, I gave it a try. It wasnt bad at all! in fact it tasted fantastic and was a great condiment for the entire meal! I never knew that raw fresh fenugreek leaves could taste so good.
After a little research I found that the fenugreek leaves used for salads are fresh ,tender methi leaves ( not the big ones that we use for vegetable or Dal preparations). Farm fresh veggies taste really awesome! Sharing with you the recipe of fenugreek / methi salad!
