Do you remember the feeling? The one that you had just before an exam ? Or more so just before a practical exam?

People say they had butterflies in their stomach….. I say there used to be a stampede , and that won’t be  exaggerating . Some of us still have nightmares , that they have an exam the next day and  can’t remember which subject !

Well its really been a long time , and I personally had forgotten that feeling altogether.

But just today, all that suddenly came back to me , when my kids asked me to make them some hash browns ( they had had at a buffet breakfast the other day ). It felt like I was standing in the middle of a science lab and my examiners were my kids. And yes , stampede it was .

That was the TASK for me. I knew it wasn’t  difficult to make hash browns , the thing I was concerned about was that they should meet the kids expectations. Kids these days are pretty straight forward,  I tell you .

So this was the first time I tried making hash browns. And yes looked for the recipe on the net. Finally decided there’s no rocket science in it, and got to work!

Instructions
  1. Wash and remove the peel of the potatoes and grate them.
  2. Take the grated potatoes in your hand and squeeze to remove excess water.
  3. Now add salt, oregano and basil and lightly mix everything together.
  4. Make 8-10 patties out of it and flatten them.
  5. Heat oil in a pan, and shallow fry the patties till they turn golden brown on both sides.
  6. Serve hot with tomato ketchup or any dips.
  7. Enjoy!
Recipe Notes

TIPS

  • Squeeze out as much water as you can from the grated potatoes to get crisp hash browns.
  • Don’t worry about the shape of hash browns, gently pat it into patties.

And yes the kids loved it !
