How to make Pani Puri at Home

This is as good as it gets!  These gol gappas taste awesome! The “ paani” makes it a lip-smacking treat! And above all its really simple to make. I had tasted home-made gol gappas at my sisters place a few months back. Took the recipe and tried it yesterday myself!.  It turned out amazing! Also having gol gappas at home means there’s no upper limit to the number you can have!

Gol gappas remind me of my senior school – college days . Those days, going out with friends  never meant pizza or burger joints . Even treats didn’t have to be at fancy restaurants or café’s .

Mostly all treats and get-togethers were around a roadside bundie , having chaat and gol gappas!!  Good old golden days.  Hey wait a minute , good old days?? Am I that old already?? Naaaa……. I am still ready for gol gappas anytime!

But these are golden memories….. the life I had before having kids of my own.  Now, if the kids say gol gappas,  there starts a slide show of how unhealthy and unhygienic these things are . And I find myself , giving them reasons as to why they shouldn’t have it . But with this recipe, just get the ready made gol gappa pooris, make the sweet chutney and teekha paani ( spicy mint chutney) at home, and  the paani poori is ready   – healthy and heiginic way!

How to make pani puri at home?

Making Pani puri has 4 components : green chutney or teekha paani , tamarind chutney(sweet n sour) , potato masala and puris.  Here I have taken ready made puris, and will share the recipe for the other 3 components.

Instructions
For teekha paani :
  1. Take mint leaves, coriander leaves , raw mango, green chilli, jeera,hing, salt and rock salt in a mixer , and grind into a smooth paste. Add some water if required.
  2. To this green paste add lemon juice and water to get a thin watery consistency. Do a taste test and adjust seasoning. Garnish with boondi and Keep in the refrigerator to chill.
For potato masala:
  1. Mix all ingredients in a small bowl . keep aside.

PLATING

Keep teekha paani, tamarind chutney , potato masala and puris together.

Take the puri, make a small hole in the center.Put some potato masala and 1 tsp tamarind chutney.

Now fill the rest of the puri with Teekha paani  and serve immediately.
