JACKFRUIT STIR FRY

In every family there are some special recipes. The ones that are a must have at a particular occasion or in a particular season.

In our family Kathal or jackfruit is one of them. This stir fried veggi is so easy and so awesome to taste, that you just cant wait till the next time its made. But sadly , raw jackfruit is not available in Hyderabad. You get the nice ripe and sweet ones here , but not the raw variety.

So this time , while coming from Nagpur , my in-laws got a nice big raw jackfruit . And the next days menu was set . All of us were waiting for my MIL to make this “ Bhaji “ . With just a few simple ingredients and some bold flavours, its sure to get on top of your favourite veggies list !

Ingredients
  • 1 kg jackfruit seed raw, cut remove cover, wash and keep aside
  • 2 tbsp oil
  • 1 tsp mustard seeds
  • 2 tablespoon khuskhus
  • 3 - 4 onions medium-sized, coarsely chopped
  • 6 - 7 cloves garlic of
  • 3 - 4 green chilli
  • 1 inch ginger piece of , grated
  • xbd tsp turmeric powder
  • 1 tsp red chilli powder
  • to taste Salt
  • xbd cup coconut dry , grated
  • coriander Finely chopped for garnish

  • 1 kg jackfruit seed raw, cut remove cover, wash and keep aside
  • 2 tbsp oil
  • 1 tsp mustard seeds
  • 2 tablespoon khuskhus
  • 3 - 4 onions medium-sized, coarsely chopped
  • 6 - 7 cloves garlic of
  • 3 - 4 green chilli
  • 1 inch ginger piece of , grated
  • xbd tsp turmeric powder
  • 1 tsp red chilli powder
  • to taste Salt
  • xbd cup coconut dry , grated
  • coriander Finely chopped for garnish
Instructions
  1. Grind ginger , garlic and green chilli in a pestle mortar and keep aside.
  2. Dry roast grated coconut, till it turns golden and keep aside.
  3. Heat oil in a heavy bottom pan . Add mustard seeds . After they crackle add khuskhus.
  4. Then add chopped onions and sautxe9 till they turn golden. Add the ginger, garlic , chilli paste and sautxe9 .
  5. Add turmeric powder, red chilli powder and salt . Add the washed , cleaned and chopped jackfruit and mix.
  6. Cover the pan and let it cook for 5 mins on medium flame stirring occassionally .
  7. When the jackfruit becomes tender add the roasted coconut and chopped coriander leaves.
  8. Saute for 2 more minutes ( without covering ).
  9. Serve hot with roti or phulka.
