Masale Bhaat recipe

Masale Bhaat brings back memories of my childhood.  My mom used to make it during festivals  as a part of the Mahaprasad for gods. The aroma used to fill the entire house , and I used to eagerly wait for the puja to get over , so that we could have it.

I don’t know if it was the puja , or the fact that it was a Prasad, that made it so divine to taste. Masale Bhaat paired with Mattha ( spiced buttermilk)and green chutney, was one of my favorite combinations.

Masale bhaat is an authentic Maharashtrian style vegetable pulav , with a distinct flavor. The flavor comes from the special masala used in its preparation – the Goda Masala !

It is an awesome one pot meal , that  is quick and easy to make. Loaded with flavours of the maharashtrian cuisine . It is one of my go-to dinner options for weeknights.

This rice preparation is made using various veggies . when you use eggplants , it becomes Vangi bhaat, if you use ivy gourd , it becomes Tondli bhaat , when you use peas , it becomes Mataar bhaat……… you got what I want to say, right ?

For todays recipe I have used , peas ,  potatoes n onions. If it were my grandmother , she would have insisted to make the rice with only one star veggie. You guys are free to follow my grandma , if you like !

Today I am sharing my grandma’s recipe, and this no doubt has to be the simplest one for Masale Bhaat. Enjoy !

Instructions
  1. Dry roast cumin seeds and grated coconut, till it turns golden brown. Remove from the heat and grind in a pestle mortar.
  2. Heat oil in a pressure pan . Add mustard seeds . After they crackle , add all the veggies ( along with green chilli ) and sautxe9 for 30 seconds.
  3. Add turmeric powder , red chilli powder and cumin coconut masala. Saute for 30 seconds.
  4. Now add the washed rice , and mix.
  5. Add 2 cups of water , goda masala, salt and jaggery.
  6. Pressure cook for 1 whistle and keep aside.
  7. Open the lid of the pan. Add little ghee and fluff the rice.
  8. Garnish with grated coconut and chopped coriander leaves ( this is a signature maharashtrian garnish !). Serve hot with Spiced buttermilk and green chutney!
Recipe Notes

TIPS

  • Do not substitute Goda masala by Garam masala , if you dont have goda masala , just omit it from the recipe.
  • Do not overcook the rice. The veggies should retain some texture too.
