Paneer and veggie salad

These days we are all looking for fusion recipes! Be it Chinese , Mexican or American , we will not love a food preparation until we Indianise it! We need an Indian desi flavor in everything …..if nothing else we’ll add a little salt n pepper!

Today’s salad recipe is inspired by the same fusion thought! A cottage cheese / paneer salad with veggies. The paneer gives the salad an Indian twist, And the freshness of veggies adds to the awesome taste!

This preparation can be enjoyed as a filling evening snack or a healthy breakfast ! Again you can experiment with the veggies, adding or deleting whatever suits your taste buds!

Instructions
  1. Mix all the veggies together in a mixing bowl.
  2. Dry roast paneer cubes on a non-stick pan and keep aside.
  3. Cut the bread slices into cubes and grill the cubes in the microwave for 5 mins, turning them over after 3 mins. The croutons are ready.
  4. Mix honey , lemon juice , salt and pepper powder in a small bowl. Pour this dressing onto the veggie mix. Mix properly so that the dressing is evenly coated on all veggies.
  5. Plating : Lay the veggie mix in the center of the plate. Add some croutons and place the roasted paneer cubes over the veggie bed. Sprinkle some chaat masala on top and serve!
