Paneer Pulav Recipe

My hubby’s side of the family has always been a big fan of North Indian cuisine. So every now and then when we all feel like having something different , we turn to the North Indian options. And I being a little more of a North Indian than the others in the family , end up creating them!

Paneer Pulav was one of the very first dishes I tried on my In-laws.Yes, I tried it on them , as even I was testing their palate. Being a vegetarian family, Paneer is like the king of all food. They instantly took to it , and it was a sudden favorite among kids and adults.

Soon kids started making requests for it , and almost everyone in the family started asking for the recipe and making it!

Yesterday was  one of those days when it was only me and kids for dinner. Planning a meal  becomes so much easier in this set up. Just make one dish that goes well with kids and you are done !

So I got thinking about what would that one thing be , which will be wholesome, filling and light for dinner ! The first thing that came to my mind was rice, that’s a real easy and quick fix option , isn’t it?…. But not just rice or khichdi, Today I wanted to make something simple but special . And so I decided on making the good old Paneer Pulav.

Paneer pulav , is a great recipe for any Indian  meal . It even makes a complete meal by itself, just serve it hot, with some curd or raita. Sharing the recipe of this simple dish , that’s loaded with Indian flavours! Enjoy !

Instructions
for the fragrant rice:
  1. Wash rice and put it in a cooker . Add water, milk , whole spices and salt. Pressure cook it , fluff a little and keep aside.
For paneer masala:
  1. Take ghee in a kadhai, lightly roast the paneer cubes to golden brown. Remove paneer cubes onto a plate.
  2. In the remaining ghee add bay leaf, green cardamom, cloves and cinnamon. Saute for 30 seconds. Add chopped garlic and ginger and sautxe9 for a minute. Then add green chilli and chopped onions and sautxe9 till onions change colour.
  3. Then add tomatoes and sautxe9 for 30 seconds. Now add the spices i.e. red chilli powder , coriander powder and cumin powder . Add green capsicum and sautxe9 for a minute.
  4. Add paneer cubes and salt .
  5. Plating: Add this paneer masala over the rice, cooked earlier and garnish with chopped coriander. Serve hot with curd or Raita and pickle !
Recipe Notes

TIPS

  • 1 Do not over cook capsicum, it should retain a little crunch.
  • 2 If you can get some pav bhaji masala , add 1 tsp of it while making the paneer masala. It give an awesome       twist to the pulav.
  • 3 You can add some saffron to the rice while cooking to give it a Shahi pulav look!
  • 4 give the pulav a mix before serving.
