Pizza Pockets Recipe

KIDS definitely know how to keep their moms on their toes. Be it free play, be it school work, be it getting ready for a party , or be it feeding them ( and that’s atleast 3-5 times a day!). I have really started to understand the phrase “ Eating with your eyes ” , after I started cooking for and feeding my kids.

The food should look good, much before it tastes good. That’s their philosophy……..and I think it applies to all of us too. We would love to try out food that looks delicious, won’t you?

So, with kids to feed, I started on a quest to make something tasty, healthy and good-looking at home.

The other morning I woke up, went into the kitchen to fix something up for the kids boxes, just to find out that their wasn’t enough raw material to make anything. Know that feeling , when theres half a carrot, 1 tomato and some frozen green peas in the fridge, and you have a meal to plan? This generally happens on Fridays ( Saturday being the official grocery shopping day)…. But this time, I don’t know why, it happened much earlier.

The situation resulted in a recipe, I call the PIZZA POCKETS!…… these are really easy to make. You can do a lot of experimenting with the stuffing here…. Adding or removing as many raw veggies as you like. A smart and tasty way to get some veggies into the kids stomach. You can add sprouts , cottage cheese chunks or pretty much anything that suits your taste. My kids simply love this…..my daughter even made me put these on her birthday party menu! And it was an instant hit at the party!

Instructions
  1. Mix together all the veggies in a bowl. Add salt, pepper powder and cheese . Mix well and keep aside. For the pockets:
  2. Take a pizza base and cut it to make 4 quarters. Take one quarter piece and slice it gently through the center , starting from the pointed end, making a pocket.
  3. Apply salsa sauce/ pizza spread on one side of the pocket. Now fill the pocket with the veggie mix. Press the pocket gently to seal.
  4. Apply a little butter on both sides of the pocket and grill it on a tawa or a grill. Serve hot with tomato ketchup.
