Rava Besan Laddo
( gram flour )
( clarified butter), divided
( I have used cashew and raisins )
Heat a heavy bottom pan, take xbd cup of Ghee and add Rava to it. On medium to low flame , roast the rava till golden brown in color. Remove onto a plate and keep aside.
In the same pan take the rest of the ghee and add besan to it. Roast it on medium to low flame , stirring continuously , till it becomes fragrant and changes color. Remove onto a plate and keep aside.
In a separate vessel , take the sugar and add 1.5 cups water to it. Heat and bring to a boil. Let it cook on a low flame till the syrup gets a 2-string consistency.
Remove the syrup from the flame . Add the dry fruit pieces , cardamom powder and the roasted Rava and Besan . Mix properly and let it cool down.
When the mixture is warm enough to touch , start shaping it into small balls or laddos. Keep in a plate , and let them completely cool down now.
Store in a airtight container at room temperature.
We need to make a sugar syrup of 2 string consistency. If the consistency is thin , shaping the laddo will not be possible.
If the mixture becomes too dry , and you are having trouble shaping it into balls , just sprinkle a little milk on the mixture and try again.
Don’t let the mixture cool down completely before shaping them into laddos.
