Roasted peanut laddo

A 2-ingredient , 2-step recipe for an awesome sweet snack. We are already in the third week of the month of Shravan . The auspicious month where everyone seems to be busy doing puja or fasting.

Be it Monday , Tuesday or Friday …. someone or the other has a fast . And along with all the fruits , milk , sabudana and potatoes , roasted peanut laddo are a must .

At our place , we keep fast on all Mondays of this month. So every Monday there is a special fasting menu with sabudana khichdi or sabudana wada or potato kees . But roasted peanut laddo , are always there as part of the menu.

A really simple recipe that has been in our family since ages . The combination of roasted peanuts and jaggery is totally addictive. We even used to have it as a snack when we were kids. Just take a big piece of jaggery and a handful of roasted peanuts, and have a few peanuts with little jaggery. The taste is just awesome. There can’t be a better and healthy snack than this.

The kids love it too . So the laddo finds its way into the kids snack boxes quite often.

  • 1/2 cup jaggery , grated

  • 1/2 cup jaggery , grated
Instructions
  1. Heat a kadhai and dry roast the peanuts till they become fragrant or the color of the brown covering becomes a little dark.Remove in a plate and let it cool a little.
  2. Put the peanuts into the jar of a mixer grinder. Add grated jaggery and grind into a coarse mixture. Now divide the mixture into eight portions and shape them into small balls.
  3. Store these laddos in a airtight container at room temperature.
Recipe Notes

Tips

  • Taste test the mixture of jaggery and peanut before making round laddo. Add more jaggery if you want.
  • You can also add dry fruits of your choice to the mixture and then shape the mixture into laddo.
  • Just pulse the mixture of peanuts and jaggery in the mixer grinder to get a coarse paste.
  • If you want the laddo to be light in color , you can remove the covering of peanuts, after roasting. Just rub them between your palms and it will be done.
