Shankarpale – Sweet Snack

Shankarpale is a traditional Maharashtrian snack that has a perfect hint of sweetness to it . It is generally prepared on the festival of Diwali . But a snack like this, doesn’t really need a festival to be around . Shankarpale are an absolute hit with the kids !

Shankarpale are mildly sweet snack , perfectly crisp with melt-in-the-mouth texture. In Marathi this texture is called “khuskhusheet “. No wonder kids love it!

With the festival of Ganapati in full swing , the festive food just keeps coming , with the Modaks being the star of the festival. We do see a lot of other sweets like sooji sheera , coconut burfi , pedha and the list goes on.

But this time my son made a request for the Shankarpale. I was a bit surprised , as he generally requests for Puranpoli and Laddo. But if the kid asks for something , Moms have to make it , isn’t it ? No option ;-). Thank god that he asked for something this simple.

The only skill required while making Shankarpale is patience , as these have to be fried on a medium –low flame ,till they turn golden brown. It is the only way to get the melt-in-the-mouth texture.

It’s a great snack for kids boxes . Also an awesome side to the evening tea!

Ingredients
  • 1 cup Milk , warm
  • 1 cup Sugar
  • 1 cup Ghee (clarified butter)
  • 5 xbd cups all-purpose flour ( maida )
  • Pinch salt of
  • Oil for frying

Ingredients
  • 1 cup Milk , warm
  • 1 cup Sugar
  • 1 cup Ghee (clarified butter)
  • 5 xbd cups all-purpose flour ( maida )
  • Pinch salt of
  • Oil for frying
Instructions
  1. In a mixing bowl take warm milk and sugar. Mix till the sugar dissolves.
  2. Add ghee to the mixture and give it a mix. Add pinch of salt.
  3. Add all purpose flour , 1 cup at a time , and knead a stiff dough.
  4. Make 6 equal portions of the dough. Take 1 portion and roll it into a big sheet of 2 mm thickness.
  5. Now cut the sheet into small squares or rectangles with a knife or a cutter.
  6. Keep the pieces aside.
  7. Repeat the step with all the dough portions.
  8. Heat oil in a kadhai. Fry the shankarpale on a medium-low flame till golden brown.
  9. Remove on a kitchen towel. Let them cool completely and store in an airtight container at room temperature.
Recipe Notes

Tips

While making the dough, add as much All-purpose flour as fits into the oil-sugar-water mixture.

While frying the Shankarpale , take care to keep the flame on medium to low.

You can give any shape to these Shankarpale , diamonds , square or rectangle.

Dust with some castor sugar if you like , after the Shankarpale cool down.
