Soya Chunks Veggie Pulav

A fragrant rice preparation , loaded with Soya chunks and veggies ! Perfect for weeknight dinners or a quick lunch. Just team it up with some curd , raita and some chutney or mango pickle . It is one healthy , nutritious , filling and tasty bowl of rice.

For most of us living a modern Indian lifestyle , weekdays are the most difficult. Its easy to give in to packaged ready-to-eat stuff , just to reduce the stress of weeknight dinners. Recipes like pulav and khichdi are on the top of our weeknight chartbusters , right?

Moreover if you have 3 generations living under one roof , its all-the-more difficult. This soya chunk veggie pulav , is my go-to recipe , during such days. Ready in just 30 minutes, it can be made with any veggie combination that is available in the kitchen.

The veggies I used today are carrots n capsicum , but you can experiment with any veggies you like.

And for the rice , there is no hard and fast rule , to only use basmati rice for this preparation. Any rice perfectly cooked and fluffed a little will do.

Instructions
  1. Wash rice. Add all ingredients for preparing rice and cook till rice is done . Fluff the rice a little and keep aside.
  2. Heat ghee in a kadhai, add cumin seeds. After they crackle add hing.
  3. Then add onions, sautxe9 till they become transluscent. Add ginger garlic paste and sautxe9 for 30 sec.
  4. Add red chili powder, coriander powder , cumin powder , salt and garam masala.
  5. Add the sliced tomatoes, cover and let it simmer for 1 minute.
  6. Remove cover and add carrots , capsicum , curd and soya chunks. Saute for a minute or till the masala starts leaving the sides.
  7. Add the cooked rice to it and mix properly so that the masala is evenly incorporated . Cover and let it simmer for a few minutes.
  8. Serve hot garnished with chopped coriander and roasted cashew, along with curd and pickle. Enjoy the soya chunks veggie pulav!
Recipe Notes

TIPS

  • If you do not have cumin powder, garam masala and coriander powder , you can just add 2 tsp of pao bhaji masala , to the veggie masala.
  • While adding salt to the veggie masala , do remember we have already put salt while preparing the rice.
  • Prepare the veggie masala on the side when the rice is cooking . this will save a lot of time!
  • Take care not to overcook capsicum and carrots, we want the pulav to have a little veggie crunch .
  • Before fluffing the rice , just pick out the bay leaf , cardamom, cloves and cinnamon stick.
