Tikhat Mithachi Poori – masala poori

Masala poori or Tikhat Mithachi poori ( in Marathi) is a hot , puffed and spicy Indian bread , made with wheat flour. It is one of the favourite breakfast or evening snack recipes enjoyed during monsoons, with a side of green chutney and ginger tea !

With monsoons just around the corner , I am all set to indulge in piping hot snacks with Adrak wali chai ( ginger tea). I know that I’m not the only one out there , who craves for the likes of kanda bhaji / onion pakoras, when it rains.

With this thought , I think I won’t wait for the monsoons. I’ll just make do with the pre- monsoons instead and start enjoying my favourite snacks.

To get the weekend started , I decided to recreate a traditional recipe called Tikhat Mithachi Poori or Masala Poori.. It is one of my grandmom’s recipe . I can still remember her sitting on the floor in the kitchen ,with a big paraat (vessel) , kneading a dough for these spicy pooris. My mom, then used to take the dough , roll out the pooris and fry them into this amazing puffed pooris.

And the fun part of having puffed pooris?… puncturing a fresh hot poori with your finger! Today I see my kids doing the same J. It comes naturally to everyone , I guess.

Ingredients
  • 4 cups wheat flour
  • turmeric 1 tsp powder
  • red chilli 2 tsp powder( adjust to taste)
  • seeds 2 tsp carom
  • sesame seeds 1 tbsp white
  • Salt to taste
  • Oil for frying
  • Water for preparing the dough

  • 4 cups wheat flour
  • turmeric 1 tsp powder
  • red chilli 2 tsp powder( adjust to taste)
  • seeds 2 tsp carom
  • sesame seeds 1 tbsp white
  • Salt to taste

  • Water for preparing the dough
Instructions
  1. In a big vessel , take wheat flour and add turmeric powder, red chili powder, carom seeds, sesame seeds and salt.
  2. Mix the ingredients properly and keep aside.
  3. Heat 4-5 tablespoon of oil in a kadhai . Pour this hot oil onto the wheat flour , and mix everything thoroughly with your hands.( be very careful as the oil is hot.)
  4. Knead the wheat flour mix properly , adding little water at a time , to get a dough.
  5. Heat oil in a kadhai for frying .
  6. Make small balls out of the dough, and flatten them using a rolling pin , to get a disc shape , approximately 4u201d in diameter.
  7. Deep fry these in hot oil till they become golden on both sides.
  8. Remove onto a kitchen towel. Serve hot with green chutney and curd . Enjoy !
Recipe Notes

Tips

  • The dough for the poori should not be very soft. A little tough dough gives the best puffed pooris.
  • While flattening the dough balls , brush a little oil on one side of the ball . The flattened disc wouldn’t stick to the base.
  • To get nice puffed pooris : Release the disc shaped dough into the hot oil , let it fry and rise in oil on its own. Now turn the poori over with a spatula and press it a little into the oil for uniform frying .
