Varhadi Bhurka – The Crunchiest Chutney ever !

Varhadi Bhurka is a super crunchy condiment , that can give a regular meal , instant texture and a spicy kick . The peanuts , sesame seeds and coconut , spiced with red chili powder, makes it a trademark Varhadi dish . A must try recipe for everyone with a spicy palate.

I belong to a family , which loves to eat and loves to cook too. And I am pretty serious about the cooking part . Almost everyone can put together a decent meal , if it comes to it . And “ everyone” includes my hubby and FIL too.

And everyone is a great appreciator of good food. Constantly on a look out for tasty recipes.

Yesterday my MIL came across one such recipe . She was reading a post shared by a friend on Facebook , describing this authentic Varhadi Bhurka. These people ( my in-laws) have a little soft corner for Varhadi recipes , that are characterized by lots of oil and red chili.

So reading about the recipe, was just enough for her. She had to make it ! She could already taste the flavors and crunch of the chutney in her mind.

The ingredients were pretty regular , so everything was available at home. So we got started immediately . Even the procedure was very simple, but the outcome was irresistibly awesome.

I know that this Varhadi Bhurka , is going to be a regular at my dining table from now on! We all loved almost everything about it , the crunch , the spicy kick and the flavors of perfectly roasted sesame seeds , peanuts and coconut.

Ingredients
  • 1 cup oil
  • 8 cloves garlic of , finely chopped
  • 1 cup peanuts , dry roast and coarsely powdered
  • xbd cup sesame seeds / til
  • xbd cup coconut grated ( dry one)
  • 1 tbsp chili powder red ( adjust according to taste )
  • to taste Salt

  • 1 cup oil
  • 8 cloves garlic of , finely chopped
  • 1 cup peanuts , dry roast and coarsely powdered

  • 1 tbsp chili powder red ( adjust according to taste )
  • to taste Salt
Instructions
  1. Heat oil in a kadhai or a heavy bottom pan . Add chopped garlic and fry on medium heat till golden brown.
  2. Then add the sesame seeds , and sautxe9 till they slightly change colour.
  3. Add the peanut powder , and again sautxe9 till it changes color to golden brown.
  4. Remove the kadhai from heat and add the grated coconut and kep stirring. It will also turn golden.
  5. Let the mixture cool down completely.
  6. Add the red chili powder and salt to taste and mix everything together.
  7. Store in an airtight container and serve with any meal and enjoy the crunchiest chutney ever!
Recipe Notes

Tips

  • Once again you need to be patient with this chutney . Everything has to be sautéed at medium to low flame , taking care not to burn anything.
  • I like my chutney to be a spicy, but you can adjust the amount of red chili powder according to your taste.
  • You can reduce the amount of oil a little, but it wouldn’t be the authentic varhadi chutney then. I used groundnut oil in this preparation.You can use any oil of your choice.
