Veggie Stuffed Buns

Plain buns stuffed with a mix of veggies in a cheesy sauce! An awesome breakfast or an evening snack for kids! Just bake these stuffed buns for a few minutes , and a hot crisp treat is ready to enjoy for one and for all.

If you have kids around in the house , you know exactly what I mean when I say , you need to be inventing all the time. They seem to be eternally hungry , for something NICE !

And in last couple of days , I have been running out of ideas for sandwiches and pizzas . These are the best options for a quick snack for me. So I was on a look out for something different. Looking at these “Tasty” videos online ( which I just love ), finally decided to give the Indian Bun pav a makeover.

So now, with the Bun in place, I had to decide on the filling. Yesterday while grocery shopping , I came across fresh sweet corn kernels after a long time . I couldn’t resist buying them and the kids love them too ! So one of the main ingredients was decided.

I am a big fan of the combination of local green capsicum , onions and corn , so that’s what I was going to have. And for the sauce mix I used the fun foods sandwich spread , cheese spread and some tomato ketchup! You can also add some honey mustard sauce if you like . And you are free to add , as much cheese as you want on top of it !

Ingredients
  • 4 bun pav
  • xbd cup sweet corn kernels , boiled
  • xbc cup green capsicum , chopped
  • xbc cup onions , chopped
  • 2 tbsps FunFoods sandwich spread
  • 1 tbsp cream cheese
  • 1 tbsp tomato ketchup ( optional)
  • Butter bun pav to brush on the
  • to taste Salt

  • 4 bun pav

Instructions
  1. Scrape out the center part of the bun pav to get a bowl shape . keep aside.
  2. In a mixing bowl take all the veggies . Add the sandwich spread , cream cheese and ketchup , salt and mix everything properly .
  3. Fill this mixture into the buns.
  4. Brush the sides of the buns with a little butter.
  5. Bake the buns in a microwave at 180 C for 10 u2013 15 minutes.
  6. Serve hot and enjoy !
Recipe Notes

TIPS

  • Take care while carving out the buns , they may break.
  • You can use any vegetable combination that you like for the stuffing.
  • If you don’t have buns , just spread the filling between normal bread slices , and enjoy an awesome sandwich 😉
